This work provides current and comprehensive information about bioactive compounds and their multiple benefits in human health from a scientific perspective, analyzing the various bioactive compounds that can be found in plants. The importance of bioactive compounds obtained from plants has increased because they have been shown to have antioxidant and antimicrobial effects. The book also explores the bioaccessibility and bioavailability of bioactive compounds and their stability to exert their health benefits, including the importance of gastrointestinal absorption for the utilization of these compounds. Finally, new generation extraction techniques are explored in order to extract phenolic compounds, terpenes, lipids, prebiotic fibres and peptides, among other relevant natural compounds. Plantbased Bioactive Compounds & Human Health extensively covers current themes about the bioactive compounds and their influence on human health. In recent decades there has been increasing use of natural extracts as food supplements, making it of increasing importance to promote the correct use of these compounds and avoid adverse effects that may compromise the health of consumers. Researchers will find information relevant to the influence of bioactive compounds in human health and how their benefits are generated from a biochemical and pharmacological point of view. In addition, this book is distinguished from others on the same subject by the inclusion of the different absorption mechanisms that these compounds may have during their intake.
