This study evaluated how the drying of Alpinia zerumbet leaves influences the properties of their extracted essential oils (EOs), still applying prediction of mathematical models for the drying phenomenon under the conditions.Through the results obtained it was possible to determine the best mathematical model for each drying kinetics. Significant differences in the properties of EOs were observed. The temperature of 45 °C made it possible to obtain the best performance of EO, still presenting the best antimicrobial activity and atoxicity. It is concluded that the drying temperature influences the physicochemical and biological properties of the EOs, thus being necessary studies such as this one that evaluate the best mathematical model to predict drying as well as how temperatures influence the properties of the product obtained.
